The GAPS Diet is comprised of only foods that are monosaccharides, as polysaccharides are unfit for a GAPS gut to digest. There are six initial "Intro-Stages" that promote healing of the digestive tract while removing any offending foods or sources of inflammation. Once the Intro stages have been completed patients can move onto "Full GAPS," which is less restrictive but still provides valuable nutritional healing. The GAPS diet is not a "one-size fits all" approach to healing.
