Kefir gained its name from where it originated in the mountains of the North Caucasus. The Kefir “grain” is not a grain at all but is rather a bacteria/yeast curd fermentation curd starter. The Kefir grain is inoculated into the cow, goat, sheep or coconut milk. After the grains ferments in the milk for 24 – 48 hours it is ready to consume and the grains can be recycled for the next batch of kefir.

According to Wikipedia “Traditional kefir was made in skin bags that were hung near a doorway; the bag would be knocked by anyone passing through the doorway to help keep the milk and kefir grains well mixed.”

It is really quite simple and much more cost affective for you to make your own than buying store bought kefir that is often times pasteurized and loaded with sugar. Simply start with your choice of milk, cow, goat, even sheep milk or non-dairy alternatives like coconut or almond milk. Add in your Kefir grains to the milk in a glass jar. Do not use metal; use a wooden or plastic spoon to stir the ingredients together. Cover loosely with a towel or coffee filter and let sit on the counter for 24-48 hours. The longer you let it sit, the stronger sour flavor and thicker texture it will be. Once it is at the desired thickness and taste you simply need to strain out the Kefir Grains then refrigerate it to stop the fermentation process. Don’t forget to rinse the grains and put them into a separate jar and and save them for the next batch. Making kefir this way is more cost effective and is a healthier alternative than buying “dead” kefir found in the stores, and will ensure that the probiotic cultures you are consuming are live and will work their magic on your digestive system. Consuming homemade kefir is extremely beneficial for gut, brain, and immune health.
